Hi Rebecca. That's such a coincidence. I'm in the process of composing a brand new warm-up for our 'warm-ups exchange' mastermind on the 14th, and my plan is to address exactly that!
Singing accurate triplets is part of the general need for choirs to be able to sub-divide beats mentally, without rushing or dragging. It's not easy and it's something that trips up many amateur singers.
For general sub-division, you can use B.I.N.G.O and Football Claps from the Warm-up Exercises section of the website.
For triplets specifically, get the choir to sing 'one, two' on a single note in a two beat pattern, then 'one, two, three' in a triplet pattern, then alternate, so you're singing 'one, two; one, two, three'. All you give them is the downbeat, first with a clap and ultimately with a gesture.
Does that make sense? What you want is for them to start hearing where to place, particularly, the second beat of the triplet. That's the point where many singers rush.

Oh, and I forgot that we have a great triplet exercise here:-
